Honey Balsamic Roasted Chicken – Easy Peasy!

Originally I thought the whole Quarantine/Covid-19 would have allowed me extra time to focus on cooking and sharing these recipes with you, but obviously that was not the case. Maybe forcing me to stay home and cook caused the opposite reaction for me? I just wanted to go out and have someone else do the dishes! Oh well. Now that the super hot temps are starting to back off I’m finding some additional inspiration. This recipe was so easy and I had quite a few people asking me for it – so I’ll do my best.

I started with a package of chicken thighs, this time I used bone in skin on – that is what I had on hand. I put them in a zip lock bag with the following marinade. Olive oil, balsamic vinegar, honey, garlic powder, salt and pepper and lemon juice. I’ll do my best to give you amounts, but I really just started mixing until I liked how it tasted. I marinated in the fridge for most of the day. Sorry – I didn’t take as many pictures for you this time!

I chose to use a cast iron skillet for this one – any oven/stove safe dish should work. I placed my chicken thighs in the cast iron and put in the oven at 400 degrees. I set the timer for an hour. When checking on them around 30 minutes I found the tops were nicely browned so I decided to cover with foil and cooked only for another 15. I didn’t even check the temperature like normal, but remember the temperature for chicken is 165 degrees. Also – they will keep cooking after (especially in the cast iron) so if you are close but not quite there that is ok!

Once removed them from the oven, I moved them to a platter and placed my cast iron skillet on the stove over medium heat. I scrapped the bits off the bottom of the pan and de-glazed with a dry red wine. (you could also use white wine or chicken broth – I just had an open bottle of cooking wine already). Let this simmer for about 10 minutes until you have a thicker sauce consistency.

Lastly, I poured the sauce over the chicken in the serving platter before serving and I sprinkled with some dried thyme.

We really enjoyed this and it was very easy to put together. This time we decided to have roasted carrots and sauteed spinach with dinner. Hope you enjoy as well!

Roasted Honey Balsamic Chicken

Ingredients
  

  • 3 tbsp olive oil
  • 5 tbsp balsamic vinegar
  • 4 tbsp honey
  • 2 tbsp garlic powder
  • 2 tbsp fresh lemon juice (or a little more)
  • salt and pepper to taste
  • 6 pieces chicken thighs
  • 2 cup dry red wine (or white wine or chicken broth)
  • 1 tbsp dried thyme

Instructions
 

  • Mix together the first 6 ingredients with a wisk. Place your chicken thighs in a zip lock or other container and pour the marinade on top. Place in the refrigerator for at least an hour and up to 24 hours. *I like to shake the bag several times through the day.
  • Preheat oven to 400 degrees.
  • Place your chicken in a cast iron skillet (or oven/stove safe pan). Be sure to get as much of the marinade as you can in the pan as well. Place in oven and set time for approx 30 minutes.
  • Check on your chicken at 30 minutes or so and if they are a beautiful brown, cover with foil. Cook another 15-30 minutes or until the internal temperature is 165 or close.
  • Remove from oven. Place the chicken in a serving platter and your skillet on the stove with the remaining marinade.
  • Turn the stove to medium/high heat. Scrape the bits off the bottom of the pan and deglaze with a dry red wine. I needed approx 2 cups to get the sauce amount and consistency needed, but start with about 1 cup. Simmer for about 10 minutes until you have a thicker sauce consistency.
  • Pour your sauce on top of the chicken in the serving platter, coating each thigh. Sprinkle with dried thyme. Enjoy!

“George’s” Chicken Soup

We are having just a couple of cooler days in the desert before we shoot up toward the 90s next week. The cooler days combined with being stuck in the house made soup sound like just the thing for dinner. One of our favorite soups both David and I enjoy is from George’s at the Cove in La Jolla, CA. If you have never been – it’s worth it! The views are incredible and if the seals and sea lions are plentiful, they are just high and far enough away that the smell won’t ruin your appetite!

This recipe is a pretty close play on their soup, which you can find their recipe online as well! We just made a few small changes. To start, we are using leftover pulled chicken. I am loving having all of the smoked meat leftover as there are so many different meals you can create! You can find my beer can chicken recipe on this site as well – make 2 or 3 at a time, pull the meat apart and freeze what you don’t eat for later!

Next, heat some oil in a pan and add your diced veggies, carrots, celery, onion and broccoli (stems and florets). I used approx 2 cups of each. I made a big batch as we like this leftover too! Cook for about 5 minutes until veggies are starting to soften. Add about 2 tablespoons each of basil, thyme and oregano (Mediterranean or Greek/not Mexican). Stir and cook together for a few more minutes. Heat your pan up slightly and add some white wine to de-glaze the pan, about 1 cup or a little more.

Next, add in chicken broth or stock – I used about 6 cups in this batch. Stir together well and simmer reducing the liquid by about 1/3. Add in your chicken. Cook for another 5 minutes and then add in 2 cans of black beans, drained, 3 tablespoons of worcestershire and hot sauce (your favorite brand). Simmer until you are ready to eat.

Before you serve, add in about 2 cups of coconut cream and mix together well. That is just about it! I like to add a dollop or two of Greek yogurt on top to add a little extra creaminess and cool the temperature down slightly. Enjoy!

“George’s” Chicken Soup

Ingredients
  

  • 3 tbsp olive oil
  • 2 cups diced carrots
  • 2 cups diced onion
  • 2 cups diced broccoli stems included
  • 2 cups diced celery
  • 2 tbsp basil
  • 2 tbsp thyme
  • 2 tbsp oregano Greek or Mediterranean
  • 1 cup dry white wine
  • 6 cups chicken broth or stock
  • 3-4 cups shredded chicken, or cubed preferrably smoked
  • 2 cans black beans drained
  • 3 tbsp worcestershire
  • 3 tbsp hot sauce
  • 2 cups coconut cream
  • greek yogurt, non-fat/plain optional

Instructions
 

  • Heat olive oil in pan and add diced veggies. Cook for about 5 minutes.
  • Add about 2 tablespoons each of basil, thyme and oregano. Stir and cook together a few more minutes. Turn heat up slightly and add white wine to de-glaze the pan.
  • Add in chicken broth, stir together well and simmer until liquid has reduced by about 1/3.
  • Add in chicken. Cook for another 5 minutes and then add in beans, worcestershire and hot sauce.
  • Simmer on low until ready to serve.
  • Add in coconut cream and stir together, cooking for a minute or so.
  • Enjoy! Add a dollop or two of yogurt on top if you like!

Creamy Mushroom and Chicken Pasta

I always love pasta. I love that you can do so many different things with it. I love that dried pasta keeps in the pantry for a LONG time so you can have it for all of those last minute throw together meals. I love that we typically have it as a one dish meal. And apparently most of the rest of the world must agree with me right now as our shelves are currently pretty bare when it comes to pasta! That’s all I am going to say about the crazy pandemic going on right now as I am sure most of us are sick of hearing about it.

We have our favorites, but you can use any kind and shape of pasta you have on hand for this. Go ahead and bring a pot of water to boil, well salted and cook your pasta per the directions.

While your pasta is cooking, heat some ghee butter in a pan and add a couple tablespoons of minced garlic. Cook for a few minutes until the garlic is fragrant and add in your mushrooms. My favorite to use are cremini, but we had baby bella on hand so that is what went in. For this dish I used 2 pint containers. Add in some salt and pepper to taste and cook down for about 3 minutes over medium heat. Turn your heat up a little and add about 1-2 cups of dry white wine. I added about 2 as I’m making a large batch. Let this cook down until the liquid is 1/2 or less.

Next, I added in some fresh kale from the garden. Any green would work. I just ripped it into approx bite size pieces and stirred into the rest of the mixture. Your pasta should be about done now. Go ahead and drain and set aside, but add about 1/2-1 cup of the pasta water to your pan.

Next you add in your chicken. We like to make several smoked chickens, pull the meat and freeze leftovers for dishes like this and that is just what we did. However, you can use chicken breast, thighs, rotisserie chicken from the grocery store or whatever you have on hand. Cubed, diced or pulled is fine too! Stir that in until it is heated up well (note you do need to pre-cook the chicken.)

I added in about 2-3 tablespoons of parsley and about 1 cup of shredded cheese. Any hard cheese works, parmesan, romano, asiago or a combination of any.

Lastly, I stirred in about 1/2 cup of heavy whipping cream. If you wanted a healthier option you could use coconut cream or even milk. That’s it – super simple. Add your pasta to the pan, mix together well and serve! I like to add a dash of freshly grated cheese on top and a sprig of parsley for plating if you want to get fancy! 😉

Creamy Mushroom and Chicken Pasta

Ingredients
  

  • 3 tbsp ghee butter
  • 2 tbsp minced garlic
  • 2 pints mushrooms baby bella, cremini or whatever you prefer
  • salt and pepper to taste
  • 2 cups dry white wine
  • 2-3 tsp parsley dried or fresh
  • 2 cups kale or fresh greens approx
  • 2.5 cups shredded chicken pre-cooked
  • 1 cup shredded cheese, parmesan
  • 1/2 cup heavy whipping cream

Instructions
 

  • Cook your pasta per the directions. Make sure to salt the water.
  • While pasta is cooking, heat ghee butter in pan and add garlic. Cook until fragrant and then add in mushrooms.
  • Add salt and pepper to taste, cook for about 3 minutes, turn your heat up and add white wine. Cook until liquid is reduced by at least half, stirring occasionally.
  • Add in shredded kale and about 1.5 cups of pasta water.
  • Add your chicken and cook about 4-5 minutes until meat is heated through.
  • Add in your parmesan cheese, stir. Add the heavy whipping cream and stir thouroughly.
  • Add your pasta to the mixture, stir together well and you are ready to serve!

Lemon Ginger Veggie Chicken Bowl

We’ve been super busy this summer.. job changes including lots of studying for David, company, travel, more company, etc. Finally we have a week at home with just us and decided we are staying in and keeping it simple for dinner all week. Time to RESET! I had some chicken already marinated and in the freezer and for whatever reason we kept skipping over the lemon ginger marinade. So I pulled it out to thaw and while at the salad bar at the grocery store over lunch grabbed a few ingredients to add!

The Lemon, Ginger chicken is a simple marinade: Olive oil, ground ginger, crushed red pepper flakes and lemon juice. Throw your chicken breasts with these ingredients into a zip lock bag and in the freezer. When you are ready to use, just pull out the morning of to thaw!

Next, I added about 1.5 tablespoons of ghee butter to my pan and heated over medium. I added in one bunch of broccolini – roughly chopped/separated into large “bite” size pieces. Stir into the melted ghee and sprinkle with a touch of salt, garlic powder, crush red pepper flakes and ground ginger.

I saw some gorgeous chanterelle mushrooms at the store earlier and grabbed them just in case.. so I threw them into the mixture as well. They were fairly small already – no need to chop. I then squeezed in the juice of one (juicy) lemon, a small bit of honey and some meyer lemon olive oil. If you don’t have meyer lemon, regular is fine as we already added fresh lemon juice. Stir over medium-high heat for about 3-5 minutes.

Then I added riced cauliflower. I used a bag of frozen from Sprouts and threw it in straight out of the freezer. Stir this together well over medium-high heat for another 4-5 minutes, then lower to a simmer and cover.

I didn’t grab any good pictures of the chicken for you, but they were just simple, organic chicken breasts with some non-colorful marinade. We grilled them over medium-high heat on the grill until they reach a temperature of 160 degrees. The optimal temperate for chicken is 165 degrees, but taking it off the grill slightly early and allowing to cool a few minutes before slicing will bring it to temperate and not lose all of the juice.

Lastly, I decided we needed just a touch of a sauce or something to drizzle on top of the bowl. So I made a creamy ginger sauce. I mixed together the following in a small bowl: approx 3 tbsp of Greek yogurt (non-fat), 2 tbsp of coconut aminos, 1.5 tbsp meyer lemon olive oil, 1 tbsp honey, 1/2 squeezed lemon, ground ginger, garlic powder and just a dash of salt. Mix together until creamy.

Slice your chicken and place over top your veggie mix in a bowl. Drizzle with your sauce. And – enjoy! 🙂 We only used maybe 1/2 of the sauce or left – so we’ll see how long it keeps in the fridge.

Lemon Ginger Veggie Chicken Bowl2

Ingredients
  

  • 2 chicken breasts large, organic
  • 3 tbsp olive oil
  • 2 lemon, juiced
  • 2 tbsp red pepper flakes approx
  • 4 tbsp ground ginger approx
  • 1.5 tbsp ghee butter
  • 1 bunch broccolini roughly chopped/separated
  • dash salt
  • 4 tsp garlic powder
  • 1.25 cups chanterelle mushrooms approx
  • 2 tbsp honey
  • 3 tbsp meyer lemon olive oil
  • 12 oz riced cauliflower frozen (1 package)
  • 3 tbsp greek yogurt non-fat
  • 2 tbsp coconut aminos

Instructions
 

Lemon Ginger Grilled Chicken

  • To make your marinade, mix together the following ingredients: 3 tbsp olive oil, juice of one lemon, 1 tbsp crushed red pepper flakes and 2 tbsp of ground ginger.
  • Place chicken and marinade in zip lock bag and marinate over-night or place in freezer for future use.
  • Thaw chicken before grilling. Grill over medium-high heat until chicken is 160 degrees. Let rest for 4 minutes before slicing. (you could also cook in oven or on stove and just look for the same temperature)

Lemon Ginger Cauliflower Veggies

  • Heat about 1.5 tbsp of ghee butter in pan over medium-high heat. Add in your broccolini and stir for 3-5 minutes.
  • Sprinkle with a dash of salt, 2 tsp of garlic powder, 1 tbsp of ground ginger and 1 tbsp of crushed red pepper flakes. (go light on the pepper if you are sensitive to heat/spicy)
  • Add your mushrooms, 1 tbsp of honey, juice of 1/2 lemon and 1.5 tbsp of meyer lemon olive oil. Stir together another 3-5 minutes over medium-high heat.
  • Pour your bag of frozen riced cauliflower into the pan (you can also use fresh!). Stir together well and reduce to a low/simmer heat and cover. Cook until your veggies are to your liking. I was multi-tasking and left them on a little longer than normal for us, but about another 12 minutes overall.

Creamy Ginger Sauce

  • Mix together the following ingredients until smooth and creamy: Greek yogurt, coconut aminos, 1.5 tbsp meyer lemon olive oil, 1 tbsp of honey, ground ginger, 1/2 squeezed lemon juice, garlic powder and just a dash of salt.

Creamy, Roasted Tomato and Chicken Zoodles

Like usual, we had a few things in the fridge that needed to be eaten before going bad.. rotisserie chicken and cherry tomatoes were a couple of those things. I tend to overbuy tomatoes anytime I find beautiful heirlooms.. I just can’t get enough! Any day now we will start picking our own right out of the backyard! In my opinion there is nothing better than eating your own homegrown tomatoes. In my family we call the cherry’s “Karen’s candy.” That’s because my sister ate them as if they were candy.

I used a mixture of zucchini and yellow squash zoodles this time. You can make your own or at our local grocery store I like to purchase the Cece’s: https://cecesveggieco.com/products/#noodled. First thing I do is wrap my “zoodles” in paper towels to soak up any extra moisture. Then on to the tomatoes. Set the oven to 450 degrees. Roll your cleaned tomatoes onto a jelly roll pan with some olive oil. Sprinkle with a pinch of salt, add some minced garlic, crushed red pepper and some vinegar (I used champagne vinegar, red wine vinegar works as well). Toss together well and place in the oven for approx 10 minutes. They are finished when they start popping open.

Next, add a little oil (olive, avocado or ghee work) enough to coat the pan. Over medium heat, add a little minced garlic for flavor and throw in your rotisserie chicken. Stir occasionally until the chicken is heated through. Squeeze your zoodles in your paper towels and add them to your pan. Stir together until the zoodles are cooked through. Should take about 6-7 minutes.

Grab your pan of tomatoes from the oven and stir into the mix. Use a spatula to scrape any bits left on the pan into your mixture. Mix this together well and you are almost done. I wanted to make this a little creamy and decided to add some goat cheese.

Stir in just enough crumbles to make your creamy texture. The flavor of goat cheese is strong enough that you don’t need much. And it soaks up the juices in the pan well. If you are a goat cheese lover like myself, you can add a few extra crumbles on top of your bowl. That’s it – enjoy! How simple right?!

If you don’t like goat cheese you could use cream cheese or even a little plain yogurt. Also on the red pepper flakes – they add heat so if you are sensitive to spicy use sparingly.

Creamy, Roasted Tomato and Chicken Zoodles

Ingredients
  

  • 4 Zucchini and/or squash Large
  • 2 Pints Cherry tomatoes
  • 4 Tbsp Olive oil Divided
  • 2 Tbsp Minced garlic
  • 2 Tbsp Red pepper flakes Approx
  • 2 Tbsp Red wine or champagne vinegar
  • 2 Tsp Salt Himalayan
  • 1.5 Cups Rotisserie chicken
  • 2 Tbsp Goat cheese Crumbled

Instructions
 

  • Spiralize your zucchini and squash (if not already done). Place between paper towels to soak up moisture.
  • Preheat oven to 450 degrees. Place cherry tomatoes and 1/2 of olive oil on jelly roll pan. Add pinch of salt, crushed red pepper and 1/2 of minced garlic. Mix together well. Place in oven for approximately 12 minutes.
  • Heat remaining oil and garlic in pan over medium heat. Add the rotisserie chicken and stir until heated through.
  • Squeeze the zucchini noodles and add to the pan. Mix together well until cooked to desired doneness. Approximately 7 minutes.
  • Once your cherry tomatoes are popping open, remove from oven. Use a spatula to scrape all juice and any remaining bits from pan into zoodles mixture. Cook for a few minutes to let flavors mix.
  • Add in your goat cheese crumbles. Stir until mixed together.
  • If you love goat cheese like we do, top your bowl with a few extra crumbles. 

Whole smoked beer can chicken

I used my husband’s Traeger for the first time yesterday and with him gone – so no supervision. I am pretty darn pleased with myself and he can’t quit raving about our dinner either – that says a lot. He actually told me that my chicken turned out better than any he has ever done. So.. I decided I will share with you all what exactly I did. Also, this will help me remember in the future!

I bought this chicken at our local Frys grocery store. Normally I would go to Sprouts, but I needed a few things they wouldn’t have. This was in their organic section and marked down since the use by date was 2 days away. I was making that day – so even better – I got a great deal on a good size bird! This was about the size of the colossal rotisserie chickens you will find in your grocery store already roasted. It will go far for the 2 of us, but is amazing left over and you also need one big enough to fit a standard can of beer up it’s behind.

After cleaning out the inside of the chicken and thoroughly washing, I made my dry rub. I threw in about equal parts of each (1/4 cup maybe?) kosher salt, black pepper, smoked paprika, dried oregano (from the garden) and lemon powder (also from the garden). Mix everything together well. *If you have never made lemon powder before, it’s amazing and I’ll add the super simple instructions on another page soon*

I don’t want to admit what I did next, but I can’t omit it.. I took softened butter and rubbed that baby down. All over. Then, get really messy, and dump your rub all over the chicken – a little inside, under the wings, every inch of the bird. I then put in the fridge for a couple of hours as I wasn’t ready to throw on the smoker yet.

It took a little over 2 hours on the smoker – so plan accordingly to when you want dinner. Or how long you have to finish. *You can make the same thing on the grill – medium to low heat for approx the same time, probably a little less. Just watch for flare ups. Check on the bird in about an hour for temp.*

When you are ready to get the bird on the smoker, first things first, and this will be as simple as I needed for my first time using the Traeger smoker.. we currently have the small one (I figured out quickly why David wants the big boy). Plug it in. Make sure your pellets are full. Open the door, turn to smoke and turn on. Wait 10 minutes. Turn to medium heat and close the door. Wait 10 minutes. Open your beer, I used a bud light. Prop your chicken onto the beer leaving about 1/2 to an inch showing on the bottom. OR – you can use a handy beer can chicken pan like shown above. You sit the can in the middle and drop the bird on top. If you have the small smoker like we do, really shove that bird down..

Or it might not fit.. the top of my bird was resting against the top of the smoker and yes, I googled if that was ok.. with no results. It was more than fine! Put your bird in the smoker and shut the lid. Another note, it was approx 97 degrees outside so that raises the temp of the grill a bit.

Check on your bird in about an hour, make sure you have pellets still in your smoker and put a thermometer in the deepest part of the breast. You are looking for 165 degrees. You could take out around 160 as it will cook while it rests. After about 2 hours our bird was right around 160. We pulled it out and let it sit for 10-15 minutes.

My husband has these super handy gloves he uses for BBQ that allow you to pull the meat apart while it’s still hot. He pulled this chicken apart for me while I was finishing the rest of our dinner. It literally fell apart – see above. And it was amazing!

Whole smoked beer can chicken

This is an amazing, tender chicken using the small Traeger smoker. You can use a grill or another smoker as well.

Ingredients
  

  • 1 whole chicken organic, good size
  • 1/4 cup butter softened
  • 1/4 cup salt
  • 1/4 cup pepper
  • 1/4 cup smoked paprika
  • 1/4 cup lemon powder
  • 1/4 cup dried oregano
  • 1 can beer

Instructions
 

  • Clean your chicken and remove any parts on the inside. Pat dry with paper towels.
  • Rub the chicken with softened butter all over.
  • Mix together: salt, pepper, smoked paprika, lemon powder and dried oregano. Rub all over your chicken and place in the fridge until ready to smoke.
  • Set up smoker on medium heat. Open your can of beer and place your chicken on top of the beer. If you have a beer can chicken pan, those work great!
  • Put your chicken on the smoker. Check on it in about an hour and then after as necessary. You want to take it out around 160 degrees – take the temp at the deepest part of the breast.
  • Once done, remove the chicken and let it sit for 10-15 minutes before pulling it apart.
  • Enjoy!!

Sheet Pan Chicken – Bowls

The idea for these bowls came from our good friends in “Napa Valley.” They introduced us to the wonderful Korean flavors we add to these. My favorite part about this dish is the simplicity. I typically purchase my chicken in bulk, separate and marinade before freezing. There are a lot of marinades that would work well with this (I’ll add some marinade options in the near future) and you can really play with whatever ingredients you like best. Also – isn’t this pan just so pretty?

Ok, so first of all we start with the chicken. For this particular dish I chose boneless, skinless thighs. You can use chicken breasts if you would like, but I would probably cut them in 1/3rds to save on cooking time as your veggies will cook faster than your chicken. Like I mentioned above, I like to marinade and then freeze them.

For this dish I used a sweet chili marinade. The marinade is very simple: homemade sweet chili sauce and coconut aminos. I would use about 2/3 chili sauce to 1/3 coconut aminos.

Last year we had much warmer temperatures early on. I had peppers ripening by late April/early May – and I could barely keep up. I was trying to decide what to do with these beauties before I picked my next batch. I decide to try a version of homemade sweet chili sauce. Hopefully a little healthier for us. So – the majority of these peppers went in. There is a mixture of serrano, banana, shishito, jalapeno and a couple poblanos included. I minced these and left the majority of the seeds. Most of these peppers have a fairly mild flavor so I wanted to leave in a tiny bit of heat.

I used about equal parts sugar to water – so depending on how many “chilies” you have, 1 cup sugar to 1 cup water. And a tablespoon of minced garlic. Boil all of these ingredients (peppers, sugar, water, garlic) and then simmer for approx 5 minutes. In a separate bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of water. Whisk the cornstarch mixture in with the remaining ingredients continuing to simmer – it should start to thicken within a few minutes. Once it’s thickened, remove from heat. You can store in canning jars in the fridge as above or use in our chicken marinade once cooled. (you don’t want to cook the chicken with your marinade)

Once you have your chicken marinated (I’d suggest at least a couple of hours or overnight). Chop your veggies. In this dish we used carrots, celery, onions, peppers and broccoli. The denser veggies work well as they don’t overcook as easily with the chicken, but you could add any of your favorites (mushrooms and zucchini are other options) If you add softer veggies I like to put them on the opposite side of the pan from the chicken so the marinade doesn’t take over.

Place your chicken on your jelly roll pan (with an edge), then layer your veggies alongside. Throw the pan in the oven at 400 degrees for about 30 minutes. Depending on how large/which cuts of chicken you use – just make sure your chicken hits the 165 temperature and the veggies will definitely be done by the time the chicken is.

Next you put your bowl together. This is really where personal preference comes into play. I’m going to list the ingredients we usually put out and then we each make our own bowls.

Your base layer – either brown rice, cauliflower rice, soba noodles or even a veggie noodle or sometimes we combine two.

Topping options we include are: cilantro (a favorite and must of ours), kimchi, some additional sweet chili sauce, coconut aminos, homemade sriracha (I’ll post a future recipe that excludes all of the sugar), fried garlic, diced peanuts and I’m probably forgetting some. Sheet Pan Chicken – Bowls

Ingredients
  

  • chicken (thighs or breasts)
  • celery
  • carrots
  • onion (sweet or red)
  • bell peppers
  • broccoli
  • sweet chili sauce
  • coconut aminos

Instructions
 

  • 1. Marinade your chicken
    2. Chop your veggies.
    3. Spread your chicken onto a sheet pan including the remaining marinade. Spread your veggies in layers next to your chicken – denser veggies closest to your veggies. Mix some of the remaining marinade through your veggies and/or sprinkle some olive oil or coconut aminos (sparingly) over your veggies.
    4. Bake at 400 degrees for approx 30 minutes or until chicken is 165 degrees. You may want to flip your chicken over 1/2 way through cooking.
    5. If needed, cut your chicken into smaller pieces – easier for eating in your bowl.
    6. Choose your bowl “bottom” and toppings and enjoy!
